Our gas-fired roaster – designed and made to order here in Israel – gives us a measure of control over the roasting processed unmatched by the typical electric machine. Exactly what we do to monitor all the variables of the multi-step roasting process is a trade secret, but every step of the way we are paying attention and making adjustments, rather than allowing the roaster to function on autopilot. Each of our varieties has its own unique flavor profile and needs to be roasted in a different way, being mindful of the size of the beans and their moisture content, the ambient temperature and humidity in our space, and whether we’re aiming to produce a light or dark roast. We have to be paying full attention in order to produce the highest quality coffees our customers have come to expect.
